How To Get Your Children To Eat More Veggies (Recipes included)

Every single child is different, and I am starting to believe that almost all children go through some sort of stage that involves picky eating. No matter what kind of diet your child eats there is nothing wrong with getting your children to eat more fruits and vegetables. My son is generally pretty good about eating….most days…but some days all he wants to eat after is comfort food. And even as an adult I can understand because, lets face it I still have those days. So what do I do when I still want to be sure he is getting in his daily dose of fruits and veggies? I sneak it in his favorite comfort foods. Here are a few examples/recipes that we use to sneak in those veggies along with the comfort food!

Gluten-Free Pasta (Brown Rice/ lentil/ spinach Pasta) with a Red Vegetable Sauce

You will need:

  • Your favorite gluten-free pasta (there are tons of gluten free pastas on the market that are perfect for sneaking in the veggies make it fun by buying them a green pasta that is made with spinach flour or pea flour and tell them it is “green monster” pasta).
  • 1 15oz can of red tomato sauce
  •  1/2 red pepper
  •  5 leaves of spinach or kale
  •  1/2 zucchini
  •  1/4 cup of chopped carrot
  1. Cook your pasta as directed on package.
  2.  Blend tomato sauce, red pepper, greens, zucchini, and carrot in the blender until smooth.
  3.  Once your pasta is cooked add the red sauce to your cooked pasta and serve with desired amount of salt and pepper.

Veggie Pizza Sauce

You will need:

  • Gluten-free pizza crust (Generally made with brown rice, millet or some other grain)
  • 1 15oz can of tomato sauce
  • 1/2 red pepper
  •  1/2 zucchini
  •  1 garlic clove
  •  1/4 cup yellow onion
  •  2 mushrooms
  •  1/4 tsp salt
  •  1/2 tsp oregano
  •  1/2 tsp basil
  •  1/2 tsp parsley
  • your child’s favorite pizza toppings
  1. Blend tomato sauce, pepper, zucchini, garlic, onion, mushrooms, salt, oregano, basil and parsley in the blender until smooth. Spread on pizza and top with desired toppings.
  2. Cook pizza as directed on crust package.

Other examples:

  • Smoothies– You can always add spinach, kale, cucumber, celery, carrots, apples, barley grass juice powder, spirulina or other greens to a childs smoothie. Kids almost always love drinking icey cold smoothies! Fill it with their favorite fruits and just add a leaf or two of greens they will hardly notice!
  •  Juices- If you have a juicer, getting your kids to make juices with you is very encouraging to them. If they can touch the veggies and fruits you place into the juicer they will almost always be excited to drink it. Good things to put into a juicer would be:
  1. Beet, Carrot, Apple
  2.  Apples, Carrot and Lemon
  3.  Kale, Apple. Ginger, Lemon
  4.  Cucumber, Apple, Lemon
  • Plant Based Mac and Cheese- Yes, if you don’t eat a plant based diet thats okay, but there is a great advantage to doing so when your trying to get your little to eat fruits and veggies. Even if your not totally into eating plant based, you can try some new recipes like our Plant Based Cheese Sauce For Your Mac, Potatoes Or Veggies
